OVEN-ROAST PULLED PORK image

Pork
Pork shoulder or butt - 10 lbs.
6 tablespoons paprika
2 tablespoons garlic powder
2 tablespoons brown sugar
2 tablespoons mustard powder
6 tablespoons sea salt
Barbecue Sauce
3 cups cider vinegar
2 cups mustard
1 cup catsup
2/3 cup brown sugar
4 garlic cloves, smashed
2 tablespoons sea salt
1 tablespoon cayenne pepper (*revised)
1 tablespoon black pepper
pan drippings

Steps:

  • Pork Prepare pork with rub; cover at least one hour or refrigerate overnight. Preheat oven to 300 degrees. Place pork in roasting pan; separate halves completely. Roast for six hours. Remove from roasting pan; allow to rest 10 minutes. Barbecue Sauce Mix ingredients in saucepan over medium heat until dissolved (approx. 10 minutes), set aside. After pork is removed, deglaze roasting pan over medium heat. Add 1+ cups of water, scraping brown bits, and reduce to one-half. Add drippings to saucepan with other ingredients over medium heat for five minutes. Now using two forks, pull meat into shreds. Place in bowl and cover with 1/2 sauce; mix well. Save other 1/2 sauce on side for serving. Serve with kaiser or other rolls.
