GARLIC & HERB ROASTED SHRIMP

1/4 pound (1 stick) unsalted butter
2 tablespoons good olive oil
2 tablespoons minced garlic (6 cloves)
2 teaspoons minced fresh rosemary leaves
1/4 teaspoon crushed red pepper flakes
Kosher salt and freshly ground black pepper
2 large lemons
2 pounds (8- to 10-count) shrimp, peeled with the tails on
1 teaspoon coarse sea salt
4 slices country bread, toasted

Steps:

  • Preheat the oven to 400 degrees.
  • Melt the butter over low heat in a medium (10-inch) saute pan. Add the olive oil, garlic, rosemary, red pepper flakes, 1 teaspoon kosher salt, and 1/2 teaspoon black pepper and cook over low heat for one minute. Off the heat, zest one of the lemons directly into the butter mixture.
  • Meanwhile, arrange the shrimp snugly in one layer in a large (12-inch) round ovenproof sauté pan (or 10 × 13-inch baking dish) with only the tails overlapping. Pour the butter mixture over the shrimp. Sprinkle with the sea salt and 1/2 teaspoon black pepper. Slice the ends off the zested lemon, cut five (1/4-inch-thick) slices, and tuck them among the shrimp. Roast for 12 to 15 minutes, just until the shrimp are firm, pink, and cooked through. Cut the remaining lemon in half and squeeze the juice onto the shrimp. Serve hot with the toasted bread for dipping into the garlic butter.

CRUNCHY FRIED SHRIMP

1 pound uncooked jumbo shrimp, peeled and deveined, tails left intact
⅓ cup flour
¾ teaspoon salt
½ teaspoon black pepper
3 large eggs large eggs
1 ½ cups Kikkoman Panko Bread Crumbs
1 cup Vegetable oil (for deep frying)

Steps:

  • Beat eggs in a medium bowl until frothy. Mix flour, salt and pepper in another medium bowl. Dredge shrimp in flour, shake off excess. Dip shrimp into eggs, then press shrimp into Panko; turn shrimp over and press into Panko again to coat both sides.
  • Pour enough oil into heavy large pot to reach depth of 2 inches; heat to 350 degrees F. Working in batches, add shrimp to hot oil; deep-fry until cooked through, about 1 minute. Using tongs transfer shrimp to paper towels to drain. Arrange shrimp on platter. If desired, serve with Kikkoman Tonkatsu Sauce for dipping.

1 lb large raw shrimp (peeled and deveined tails left intact)
1/4 cup flour
1/4 cup egg substitute
2 tablespoons skim milk
1 tablespoon lemon juice
1/4-1/2 cup Italian seasoned breadcrumbs
1/2 teaspoon garlic powder
1/2 teaspoon Old Bay Seasoning
1/8 teaspoon cayenne pepper

Steps:

  • Heat oven to 425.
  • Mix egg beater, skim milk, and lemon juice in a small bowl.
  • Put flour in a small plate and put breadcrumbs, garlic powder, old bay seasoning, and ceyenne pepper in a different plate.
  • Using tails to hold on to dip the shrimp into flour and shake off excess, then dip in egg and then bread crumbs.
  • Place shrimp on a greased pan.
  • Once all shrimp are breaded, put pan in oven for 5 minutes Then move pan 5" from broiler and broil additional 2 mins or till shrimp are opaque.

24 large prawns, peeled & deveined; tiger prawns/shrimp is good size
1 1/2 c plain dried panko breadcrumbs
3/4 c all-purpose flour
4 large egg whites, slightly beaten
1 1/2 tsp sea salt, 1 tsp. for breadcrumbs & 1/2 tsp. for flour
1/4 c olive oil, add more as needed

Steps:

  • 1. Preheat oven to 475 degrees.
  • 2. Purchase large Prawns/Shrimp like a nice size Tiger Prawn.
  • 3. Clean and devein Prawns if they are not purchased that way.
  • 4. Gather all ingredients.
  • 5. Pour flour, lightly beaten egg whites, Panko Breadcrumbs and Olive Oil in 4 shallow bowls and add 1/2 tsp. salt to flour and 1 tsp. salt to breadcrumbs.
  • 6. Dredge shrimp in flour, shaking off excess. I use a spoon to help cover shrimp with flour.
  • 7. Dip shrimp in egg whites and let excess drip of.
  • 8. Cover shrimp with breadcrumbs. Use spoon to help cover shrimp with the crumbs.
  • 9. Press shrimp in oil on both sides. Add more oil as needed to coat all shrimp.
  • 10. Set slightly apart in baking pan.
  • 11. Bake shrimp until browned on bottom, about 8 minutes; then turn over and bake for an additional 8 minutes until golden brown and opaque but still moist-looking in center of thickest part.

  • 13. Make Ahead Hint: Bread Shrimp early in day and chill uncovered in refrigerator for 3 to 4 hours (the coating dries out and the Shrimp gets crisper). I highly recommend doing this!

BAKED COCONUT SHRIMP

1 pound large shrimp, peeled and deveined
⅓ cup cornstarch
1 teaspoon salt
¾ teaspoon cayenne pepper
2 cups flaked sweetened coconut
3 egg whites, beaten until foamy

Steps:

  • Preheat an oven to 400 degrees F (200 degrees C). Lightly coat a baking sheet with cooking spray.
  • Rinse and dry shrimp with paper towels. Mix cornstarch, salt, and cayenne pepper in a shallow bow; pour coconut flakes in a separate shallow bowl. Working with one shrimp at a time, dredge it in the cornstarch mixture, then dip it in the egg white, and roll it in the coconut, making sure to coat the shrimp well. Place on the prepared baking sheet, and repeat with the remaining shrimp.
  • Bake the shrimp until they are bright pink on the outside and the meat is no longer transparent in the center and the coconut is browned, 15 to 20 minutes, flipping the shrimp halfway through.
