OVEN FRIED CHICKEN LEGS LINDA'S WAY image

4-6 Chicken legs
1 stick unsalted butter
1 cp fresh bread crumbs
1/3 cup Kraft Parmesan Cheese
2 tsp dried parsley flakes
1 tsp. paprika
salt & Pepper
Lemon Juice for brining chicken

Steps:

  • Soak chicken pieces in lemon juice and water mixture in a zip lock bag for at least 30 minutes up tofour hours. Take chicken pieces out of lemon juice mixture and pat dry. Meanwhile, Preheat oven to 350 degrees. Melt butter in a a small pot and transfer into a small dish large enough to coat chicken legs in. Pour small amount of butter in baking dish to coat bottom. In another small dish or breading tray, mix bread crumbs, Parmesan, herbs paprika and salt and pepper. Coat each piece of chicken with butter, then dredge in bread crumb mixture. Place in baking dish. Drizzle remaining butter over chicken. Bake in oven for 1 hour to 1-1/4 hours until coating is golden brown and chicken meat slides off a fork.
