Cut 5-6 red potatoes into cubes. Place the potatoes in foil. Season with lemon pepper and lots of butter . Add favorite veggies, i.e., red bell pepper, onion, mushroom.... fold long ways and place in oven on a tray. Cook at 350 for 30 minutes. remove from oven. Unfold and test potatoes for softness. If not completely soft, cook another 15 minutes. Fast and easy side dish.
