INGREDIENTS:
CANDIED PECANS:
1 Tsp butter
½ Tsp cinnamon
2 Tbsp water
1 and ¼ c pecans (chopped)
½ c granulated sugar
CINNAMON CROUTONS:
2 Tbsp sugar
½ Tsp cinnamon
1/3 c salted butter
2 c cubed Bushman Bread (or, Pillsbury Honey White Bread or Hawaiian Sweet Bread)
CINNAMON APPLES:
1/3 Tsp cinnamon
1 Tbsp brown sugar
1 can of apple pie filling (20-oz)
4 fresh strawberries
½ c caramel topping (Smucker's recommended)
1 and ½ c whipped cream
4 c vanilla ice cream

Steps:

  • PROCEDURE:
  • To make the candied pecans, first mix 2 Tbsp of water, a half cup of granulated sugar, half Tsp cinnamon and 1 Tsp butter in a small saucepan over moderate heat. Heat all the ingredients until it boils and the entire sugar dissolved.
  • Once the mixture is ready, add the chopped pecans and stir the mixture for about 1-2 minutes. Make sure that the mixture coats all the pecans.
  • Transfer the mixture to a large-size plate and stir continuously until it hardens and starts to break up. The candied pecans are ready when you can separate all the pecan nuts.
  • To make the croutons, first start by preheating the oven to 300 degrees Fahrenheit. Put the slice bread cubes onto cookie sheet (ungreased). Bake it for about 15-20 minutes, or just wait until the color of the bread turns light brown. Blend it halfway through.
  • Get a skillet and melt the butter over medium heat. Put the baked croutons then sauté it until the croutons are well-covered with butter. Get another bowl (small) and mix ½ Tsp cinnamon and 2 Tbsp sugar. Drizzle the mixture on top of the croutons while stirring them to make sure that the croutons are well-covered with the cinnamon/sugar mixture. Remove it from heat then transfer to a plate to cool.
  • Prepare the apples by mixing them carefully with a tablespoon of brown sugar and a quarter teaspoon of cinnamon in a large-size bowl. Make sure not to stir too hard or else the apple will break up. Afterwards, microwave them for about a minute or two, or until the apples are hot.
  • To arrange the dessert for serving, start by rolling four scoops of vanilla ice cream in the candied pecans. If you want to, you may do this step earlier then store the pecans covered with ice cream in the freezer.
  • Put a scoop of ice cream to a small plate, then sprinkle about 1 tablespoon of caramel on top of the ice cream. Put another tablespoon surrounding the base of the ice cream plate.
  • Spread the prepared hot apples surrounding the base of the ice cream plate. Don't forget to divide equally the apples for each serving.
  • Divide into four the croutons and drizzle then on top of the apples that surround the base of the plate.
  • Put a generous amount of whipped cream over each ice cream scoop.
  • Top it off with a fresh strawberry.
