1 small eggplant, peeled & 3/4in. diced
1 red bell pepper, 1 in. diced
1 yellow bell pepper, 1 in. diced
1 red onion peeled & 1 in diced
2 cloves garlic, minced
1/3rd cup olive oil
1 1/2 tsp Kosher salt
1/2 tsp freshly ground black pepper
1/2 lb orzo
For the Dressing:
1/3 cup fresh lemon juice (2)
1/3 olive oil 1 tsp. salt
1/2 tsp. ground black pepper
To Assemble 1/4 cup pignolis, toasted
3/4 lb Feta 1/2 in diced (not crumbled
15 fresh basil leaves cut into chiffonade
4 scallions sliced (white and green parts).

Steps:

  • preheat oven 425 degrees toss egplant-peppers. onion & garlic with olive oil, salt & pepper on baking sheet roast for 40min untill browned, turning once with spatula cook orzo in boiling salted water for 7-9 mins drain & transfer to serving bowl add roasted veggies to pasta, scraping all liquid from roasting pan into pasta bowl add dressing, let cool at room temp, then add & assemble rest of ingredients serve at room temp. enjoy!
