Steps:
- preheat oven 425 degrees toss egplant-peppers. onion & garlic with olive oil, salt & pepper on baking sheet roast for 40min untill browned, turning once with spatula cook orzo in boiling salted water for 7-9 mins drain & transfer to serving bowl add roasted veggies to pasta, scraping all liquid from roasting pan into pasta bowl add dressing, let cool at room temp, then add & assemble rest of ingredients serve at room temp. enjoy!
