ORZO SALAD WITH FETA VINAIGRETTE image

Ingredients:
1 c orzo pasta, cooked according to pkg. directions
2 c baby spinach, chopped
1/2 c sun-dried tomatoes packed in oil, drained and chopped
3 T red onions, chopped
3 T kalamata olives, pitted and chopped
1/2 t black pepper
1/4 t salt
1 six-ounce jar marinated artichoke hearts. Drain and reserve marinade, then coarsely chop.
3/4 c feta cheese, crumbled

Steps:

  • Combine cooked orzo, spinach, tomatoes, red onions, olives, pepper, salt, chopped artichokes and feta cheese in a large bowl. Pour in reserved marinade and toss gently to coat. Chill for at least one hour.
