Oriental Salad image

This has been in our family for many years. This is a very refreshing salad. If you want you could even add chicken to it to make a full meal. I serve the crushed ramen noodles on the side, otherwise they get soggy and I usually toast them in the oven at 400 for about 5-10 min, just till they get a little brown. Watch them carefully, they can burn fast after they are brown.

1/2 cup oil
3 tablespoons vinegar
2 tablespoons sugar
1/2 teaspoon salt
1 seasoning packet from ramen noodles
1 (14 ounce) package preshredded coleslaw mix
1 (4 ounce) package oriental-flavor instant ramen noodles, crushed
1 (11 ounce) can mandarin oranges, drained
1 (2 ounce) package slivered almonds or 1 (2 ounce) package sunflower seeds
3 green onions, sliced fine
1 (6 ounce) package la choy snow pea pods (thawed) (optional)

Steps:

  • In a large mixing bowl combine the dressing: oil, vinegar, sugar, salt, and seasoning packet from ramen noodles.
  • Add the salad ingredients: cole slaw mix, ramen noodles, mandarine oranges, almonds or sunflower seeds, and green onion.
  • Mix well and serve with crushed ramen noodles.
