This is a new recipe for me, found when I was looking for my orange muffin recipe for Bea Liles. They are a Taste of Home recipe by Robert Taylor of Mesa, Arizona. 1 medium navel orange
1/2 c orange juice, fresh
1/2 c butter, melted
1 egg
1 1/2 c all purpose flour
3/4 c sugar
1 tsp baking powder
1 tsp baking soda
1 tsp salt
1/2 c raisins

Steps:

  • 1. SEE NEW NOTE ABOVE ABOUT THE PEEL....peel orange and place peel in a blender or food processor. Separate orange into segments; place in blender. Add orange juice; cover and process until well blended.
  • 2. Add butter and egg.
  • 3. In a large bowl, combine the flour, sugar, baking powder, baking soda and salt.
  • 4. Stir the orange mixture into dry mixture just until moistened. Fold in raisins.
  • 5. Fill greased or paper lined muffin cups two-thirds full.
  • 6. Bake at 400* for 15-20 min or until a toothpick comes out clean.
  • 7. Cool for 5 minutes before removing from pan to wire rack.
