Orange-Mint Peas image

Great side dish for meatloaf. Garnish with curls of orange rind, if desired.

4 tablespoons butter
6 cups fresh green peas
4 tablespoons fresh orange juice
2 tablespoons grated orange zest
2 tablespoons chopped fresh mint
1 teaspoon salt
½ teaspoon ground black pepper

Steps:

  • Melt butter in a medium saucepan over medium heat. Add peas, orange juice, and zest. Cook until heated through, stirring occasionally, 8 to 10 minutes. Stir in mint, salt, and pepper.
