Steps:
- Mix together all ingredients except the oil. Whisk ingredients while slowly adding the oil until well incorporated. Refrigerate until ready to use. Allow vinaigrette to sit at room temperature for half an hour before using. Mix well. This dressing is used at Mojos restaurant on their summer salad. Mojos summer salad also contains baby greens, arugula, Mandarin oranges, toasted almonds, red onion, Manchego cheese and chilled roasted chicken.
