This is an easy meal that I prepare often! I actually showed my adult son how to make this when he was at home recently.

Steps:
- 1. Wash chicken breasts thoroughly, and cut them into small pieces. (I lightly salt and pepper the chicken, and I also add a little sweet ginger.)
- 2. Dip chicken into egg wash, and then douse them in the flour/corn starch mixture.
- 3. Warm oil in large frying pan to medium heat.
- 4. Add chicken to frying pan, and cook completely for about 20 - 25 minutes. Turn chicken often to ensure proper cooking and browning.
- 5. Add soy sauce to chicken and stir throughout.
- 6. Add bbq sauce to chicken and stir throughout.
- 7. Add orange marmalade to chicken, and stir throughout. Let simmer on low heat for about ten minutes until sauce thickens. (Do not cook on too high of heat or it will stick.)
- 8. Serve over white rice. I usually make about four cups of rice, according to package directions. (I add a little butter to my boiling water.)
