Ooey Gooey Pineapple Bars image

If you love pineapple, you will love these bars...The butter rich crust just melts in your mouth, and the subtle hint of rum, really works with the overall flavor...you could use coconut, pineapple or vanilla extract as well...they would still be delicious!! I hope you give these wonderful bars a try... Photos are mine

Number Of Ingredients 21

CRUST
2 c ap flour
1 c softened, butter
6 Tbsp confectioners' sugar
FILLING
1 - 20 oz crushed pineapple in own juice - drained - reserve the juice
4 eggs
2 c sugar
1/2 c flour
1 tsp baking powder
1/2 tsp salt
4 oz cream cheese, softened
1/2 tsp rum extract
1 c shredded coconut - i used mounds coconut
1 c chopped macadamia nuts ( optional ) i didn't use
GLAZE
4 oz cream cheese, softened
2 - 21/2 c confectioners' sugar - depending how thick you want the glaze - i used 2 cups
6 - 7 Tbsp reserved pineapple juice
1/4 tsp rum extract
few handfuls of coconut

Steps:

  • 1. Preheat oven to 350 degree F. Spray a 9 x 13 baking pan or dish with nonstick cooking spray.
  • 2. In a medium bowl, mix the flour, confectioners' sugar and butter until crumbly.
  • 3. Press into prepared baking pan, evenly with fingers. Bake for 10 minutes. Set aside.
  • 4. In the same bowl; beat the eggs with a wire whisk until blended. Add the remaining filling ingredients, mix until well blended.
  • 5. Pour and spread over crust evenly.
  • 6. Bake for 35 - 40 minutes or until golden. Cool completely on cooling rack.
  • 7. Glaze: In a small bowl, mix frosting ingredients until smooth. You can thin it out with more pineapple juice if you want it to be more like a glaze and not as thick as a frosting. Glaze the bars and sprinkle with coconut. I have also toasted the coconut for these bars. Great either way.
  • 8. Enjoy!! They sure are yummy!
