Onion Pie image

My Mother used make this when I was a little girl then I found it in a cookbook years ago. This brought back several memories.We lived on a farm and Mom had to utilize everything. I hope you enjoy this. Its one of our favorites.

Number Of Ingredients 8

3 large onions, sliced
1 Tbsp butter
3 large eggs
2 c half-and-half cream
4 slice bacon, cooked and crumbled
1/2 c cheddar cheese,shredded (sometimes i use 1 cup of cheese)
salt and pepper to taste
pastry for double crust pie, 9 inches

Steps:

  • 1. In a skillet, saute onions in butter until golden brown. In a bowl, beat eggs and cream. Add the onions, salt and pepper. Line a deep dish pie plate with bottom pastry. Add egg mixture; sprinkle with bacon and cheese. Roll out remaining pastry to fit top of pie;place over filling. Seal and flute the egdes; cut slits in top. Bake at 350 degrees for 55-60 minutes or until crust is golden brown. Let stand 15 minutes before cutting. Refrigerate leftovers.
