ONION PANADE image

Number Of Ingredients 8

3 Lbs. Onion, thinly sliced
2 Tbsp. Butter
2 Tbsp. Olive Oil
2-3 Sprigs Thyme
1 tsp. Salt
1/2 Loaf Country Style Bread, Stale
4-5 Cups Chicken Stock
3/4 Cup Parmesan Cheese

Steps:

  • Heat butter and olive oil in a heavy bottomed skillet. Cook onions over medium low heat until soft and slightly colored, about 45 minutes. Season with salt. Add chicken stock and thyme. Simmer about 10 minutes. Remove thyme stems and check seasonings. Meanwhile, slice bread and dry until crisp, but not colored in 250 degree oven. Make a layer of bread in an 8x12 baking dish. Cover bread with half of onions and 1/2 of cheese. Cover with bread, remainder of onions, and 1/2 of cheese. Finish with bread. Ladle stock over bread until top layer floats. Sprinkle with cheese. Bake in 375 degree oven for 1 hour.
