Steps:

  • Make sure neck and giblets are out of the chicken. Put chicken in the crock pot (mine is 5 quart). Add all other ingredients around it. Add enough water to completely cover chicken. Put the lid on the crockpot. Turn the crock pot to high and let cook until meat falls off the bone or the internal temperature of the chicken is 180 degrees - right around 5-6 hours. Remove chicken from pot and set aside. This chicken is tasty and ready to use in other recipes like chicken pie! Using cheesecloth over a fine mesh sieve, strain the broth into a large glass bowl. Cover and let cool. Once cooled down to about room temperature, place into the fridge. Refrigerate overnight. The fat should congeal and harden at the top. Remove as much as possible. Mix the broth once the fat is removed to incorporate the sediment. That has flavor. Portion out the broth and either use or freeze. Makes about 8 cups depending on the size of your crock pot.
