One-pan chicken couscous image

Number Of Ingredients 10

1 tablespoon olive oil
1 onion (thinly slcied)
1 piece fresh ginger
2 tablespoons harissa paste
220 grams chickpeas (rinsed and drained)
10 dried apricots
200 milliliters hot chicken stock
200 grams couscous
1 handful cilantro (chopped)
200 grams organic chicken breasts (chopped)

Steps:

  • Heat oil in large frying pan/wok, and cook onions for 1-2 mins.
  • Add chicken and fry for 7-10 mins, until cooked through and onions golden.
  • Grate over giner, stir in harissa paste well, and cook for 1 min more.
  • Add apricots, chickpeas, and couscous. Pour in stock and cover pan with a lid (or foil). Leave for 5 mins.
  • Once the couscous has soaked up all the stock, fluff up with a fork, and serve with a garnish of cilantro.
