Steps:
- Heat oil in large frying pan/wok, and cook onions for 1-2 mins.
- Add chicken and fry for 7-10 mins, until cooked through and onions golden.
- Grate over giner, stir in harissa paste well, and cook for 1 min more.
- Add apricots, chickpeas, and couscous. Pour in stock and cover pan with a lid (or foil). Leave for 5 mins.
- Once the couscous has soaked up all the stock, fluff up with a fork, and serve with a garnish of cilantro.
