Olive oil granola (From New York Times recipe) image

Number Of Ingredients 11

1 kg bag/10 cups Old-Fashioned rolled oats (big flake oats is fine), but standard oatmeal works too.
3 cup Coconut flakes
1 cup Maple syrup (real)
1 cup Packed brown sugar
1 1/2 cup Olive oil
1/2 teaspoon Salt
1 1/2 teaspoons Ground cinnamon
1 teaspoon ground cardamon
2 1/2 cup Slices almonds
1 teaspoon Allspice
2 Egg whites

Steps:

  • Preheat oven to 300 degrees.
  • In a large bowl, combine dry and mix, then add wet and mix well. Spread mixture on a rimmed baking sheet in an even layer.
  • Beat 2 egg whites til very frothy (use wisk). Mix in lightly egg whites (helps to clump granola together).
