This is the pudding that my mother used to make when we were growing up. It is so delicious. It has a baked meringue topping which is so wonderful, but if you don't like meringue, you can skip that step and use whipped topping. 3/4 c granulated sugar
3 large eggs, separated
1 dash(es) salt
2 Tbsp flour or cornstarch
2 c whole milk
1 tsp vanilla extract & 2 tbs. butter or margarine
3 or 4 ripe bananas
1 box vanilla wafers cookies
2 Tbsp sugar for mirangue

Steps:

  • 1. Mix sugar and egg yolks together. Add salt, flour and milk..whisk well to mix.
  • 2. Bring to a boil over medium heat, stirring constantly until thickened. Remove from heat and stir in vanilla and 2 Tbs. of margarine or butter, mixing well.
  • 3. Layer one third of the wafers, bananas and pudding in a casserole dish. Repeat twice more, ending with pudding. Put aside
  • 4. Preheat oven to 325: In a mixing bowl, beat the egg whites until foamy. Gradually add in the 2 Tbs. of sugar and beat until stiff peaks form. Spread on top of pudding sealing to the edges of the dish. Bake in preheated oven for about 25 minutes until meringue is golden. Let cool before serving.
