Oatmeal Raisin Cookies by Rose image

1 1/4 cup(s) packed brown sugar
1/2 cup(s) shortening
1/4 cup(s) butter softened
1/4 cup(s) water
1 - extra large egg
1 1/2 teaspoon(s) vanilla
3 cup(s) uncooked quick oats
1 cup(s) flour
1/2 cup(s) flaked coconut
1/2 teaspoon(s) baking soda
1/2 teaspoon(s) cinnamon
1/2 teaspoon(s) salt
1/2 cup(s) chopped walnuts
1 cup(s) sun maid baking raisins

Steps:

  • Heat oven to 375. Lightly grease cookie sheets. In a large bowl combine sugar, shortening, butter, water, egg and vanilla. Beat medium speed. Add oats, flour, coconut, baking soda, cinnamon and salt, beat at low speed until soft dough forms. Stir in raisins and walnuts. Drop by heaping tablespoon 2 inches apart on prepared cookie sheet. Bake 8 to 10 minutes or until golden brown. Cool completely before storing. Can be frozen also.
  • I stress Sun Maid Baking Raisins because they are especially moist if you can't find them then I soak golden raisins in warm water. The baking raisins make a difference in the moisture.
