The other day I made my first oat milk. It was delicious. But it left behind a 1/2 cup of pulp. The original recipe said to use in bread or oatmeal. I was making neither. MIX IN A BOWL BEATING WELL
1/2 c pulp from making oat milk (no liquid)
1 stick butter (1/2 cup)
1/2 c sugar
1/2 tsp cinnamon, ground
1 tsp vanilla
1 lg egg
1/2 tsp salt
1 1/4 tsp baking powder
THEN ADD
1 1/4 c flour
1/2 c white chocolate chips
1/3 c raisins

Steps:

  • 1. First you need to make the oat milk below and after strain9ing it you should have just about 1/2 cup pulp, to use in this recipe. Preheat oven to 350 degrees
  • 2. In a bowl add egg, sugar, oat pulp, cinnamon, butter, salt baking powder,and vanilla. mix well. Then add the flour, raisins, and white chocolate chips. Drop by spoonfuls onto a cookie sheet and bake for 10-12 minutes.
