- Preheat your oven to 350 F. In a large bowl, whisk together vegetable oil, brown sugar, egg and vanilla until the mixture is thick and smooth. With a wooden spoon, stir in grated zucchini. In a separate bowl, mix together flour, cinnamon, nutmeg, baking soda, baking powder and salt. Add dry mixture to wet mixture. Gently fold in nuts and chocolate chips. Prep your muffin baking pan with paper liners and fill the cups 2/3 full of batter. Bake for 10-15 minutes until your muffins are set and the tops spring back when gently touched.
