Not Traditional Dirty Rice image

I love dirty rice but younger kids are usually not crazy about chicken livers or gizzards so I have come up with this recipe that mimics traditional dirty rice without the livers/gizzards but with a ton of flavor. 1 Tbsp each of canola oil & butter
1/2 medium zucchini (1/4 cup)
1/2 large yellow onion, diced
1/2 medium red bell pepper, diced
1 large celery stalk, diced
1 clove garlic, minced
1 Tbsp worcestershire sauce
1/4 c red wine
1 1/2 c water
1 bay leaf
1 tsp onion powder
1 tsp mrs. dash garlic and herb blend
2 tsp red pepper flakes
1 tsp poultry seasoning
1 tsp ground sage
2 pinch salt and pepper
2 c brown rice, quick cooking

Steps:

  • 1. In 3 quart pot heat canola oil and butter until butter is melted.
  • 2. Add diced onion, pepper & celery & zucchini to the oil and saute until softened about 2-3 minutes.
  • 3. Add garlic, worcestershire sauce, bay leaf, onion powder, mrs. dash, red pepper flake, salt and pepper. Let simmer for 2-3 minutes so flavors develop.
  • 4. Add rice and bring back to a boil then turn down to a simmer for 5 minutes according to the box directions. Serve as a side dish with chicken, fish or seafood.
