Not Quite Your Wise Guy Spaghetti Sauce image

Years ago the Sicilian owners of a nail shop gave me their family sauce recipe. I've changed it over the years to my own tastes. Their recipe was olive oil, garlic, hot pepper flakes, tomatoes and cheese. The rest is mine. Sauce is a family thing, but this one has just the right sweet/hot ratio for me.

  • Continue the simmer until sauce has thickened to the right consistency. Usually about 2 hours in total.
  • Shut off heat, add the cheese, any fresh herbs, and taste for sweetness and add sugar if desired.
  • Best if you can let this sit for a hour or two. Reheat slowly, adding meatballs if desired.
