Norwegian Apple Pie image

You can use any kind of apples here, but I personally prefer that old-fashioned standby - Golden Delicious. The apple can be peeled or not, it's up to you. Don't be tempted to leave out or substitute for the cardamom or almond extract though. They are what make this version special.

1 egg
¾ cup sugar
1 tsp almond extract
⅛ tsp ground cardamom
1 tsp baking powder
½ cup unbleached, all-purpose flour
½ cup walnuts, chopped
1 cup diced apple

Steps:

  • Preheat oven to 350 degrees.
  • In a large bowl, beat together egg, sugar, extract and baking powder until fluffy.
  • Stir in flour and cardamom until blended.
  • Fold in walnuts and apple.
  • Spoon mixture into a greased 8 or 9 inch pie pan. Bake for 30 minutes.
  • Serve with ice cream or topped with whipped cream.
