NORTH AFRICAN CARROT SALAD image

Number Of Ingredients 10

1 pound carrots, peeled and julienned or grated coarsely in a food processor
3 T fresh lemon juice
2 T olive oiil
1 large clove garlic, finely minced
1/2 tsp or more sugar, to taste
1/2 tsp cumin
1/4 tsp cayenne, or to taste
1/4 tsp dried mint leaves, crushed
freshly ground black pepper to taste
salt to taste

Steps:

  • Place the carrots in a bowl. In a jar or small bowl, combine the dressing ingredients. Toss the dressing with the carrots and serve.
