Nonni's Meatloaf image

This meatloaf is pure comfort food, especially when served with mashed potatoes! My hubby loves meatloaf, so I have been working on perfecting a meatloaf recipe for years. He loves this one!

Number Of Ingredients 16

2 large eggs, beaten
1/4 c milk
1/2 c tomato sauce
2/3 c bread crumbs, fine-dry or crushed crackers
1 small yellow onions, chopped fine
2 Tbsp fresh parsley, chopped fine
1 tsp salt, pepper and garlic powder to taste
3 tsp worcestershire sauce
1 tsp italian seasoning
2 lb lean ground beef
MEATLOAF GLAZE
1/4 c ketchup
2 Tbsp brown sugar
1 tsp dry mustard
2 dash(es) worcestershire sauce
or use bottled bbq sauce, enough to cover top of meatlof

Steps:

  • 1. In a med-large bowl, combine eggs, tomato sauce, worchestershire sauce; stir in breadcrumbs or crackers, onion, parsley, garlic powder, salt, pepper, & Italian seasoning. Add ground meat; mix well. Hands work best.
  • 2. Pat meat mixture into a 8x4x2 inch loaf pan. *Optional:(Anolon makes an awesome meatloaf pan for us meatloaf fans. A loaf pan with drain holes, that sits inside another loaf pan that catches the fat drippings!)
  • 3. Bake at 350 degrees F oven for 35-40 minutes. Spoon off fat if necessary.
  • 4. In a small bowl, combine ketchup, brown sugar, dry mustard, & worchestershire sauce. HINT:(Best to mix up the glaze while meatloaf is baking). Spread glaze over meatloaf and bake for another 10 to 15 minutes.
  • 5. Let stand for 10 minutes before slicing. (This is a good time to whip up your mashed potatoes). Serve with mashed potatoes and niblet corn. And brown gravy if you like. Yum-Yum!
