NO MAYO PASTA SALAD image

Number Of Ingredients 14

1 lb. pasta-ziti, penne, bowties, tri-color rotini
1 yellow pepper
1 red pepper
12 oz. Broccoli florets
12 oz. Cauliflower florets
1 cup white or red onion
1 pkg. cherry tomatoes
2 English cucumbers
Dressing:
5 tbsp. your favorite Italian Dressing
1/4 c. Red wine vinegar
¼ c. Olive oil
S & P
(add any other vegetables you want)

Steps:

  • Chop all the tomatoes, cucumbers, peppers and onions and set aside. Boil water for the pasta. Salt water at first boil. Cook pasta for designated time. Sauté the broccoli and cauliflower in a pan with olive oil starting at medium-high heat, but then lowering heat as veggies soften. Season veggies with S & P to taste. Cooking time roughly 10 to 15 minutes.. (Coordinate with pasta) Strain pasta and put in a large bowl. Place broccoli and cauliflower into the pasta first. Add all the other chopped vegetables and mix.Add dressing over pasta and stir. Cover, and refrigerate. Serve chilled or at room temperature.
