NO-FUSS MOROCCAN CHICKEN & MOROCCAN COUSCOUS image

750 g. boneless, skinless chicken breast halves
2 tbsp. vegetable oil
Preheat oven to 325ºF. Brown chicken in oil and place in baking dish.
1/2 cup onions, chopped
1 garlic, minced
Lightly sauté onion and garlic. Spoon over chicken.
2 cups salsa
1/2 cup water
1/4 cup currants
2 tbsp liquid honey
1.5 tsp cumin
1 tsp cinnamon
1/2 cup slivered almonds
Moroccan Couscous
1 1/4 cup water
1/4 cup dark raisins or dried currants
1 tbsp butter or margarine
3/4 tsp salt
1/4 tsp cinnamon
1/4 tsp turmeric
1/4 tsp ground cumin
1 cup couscous
In saucepan, combine water, currants, butter, and salt; heat to boilng over high heat. Stir in couscous. Remove from heat; cover and let stand five minutes. Maks about 3 cups or 4 accompaniment servings.

Steps:

  • Combine salsa, water, currants, honey, cumin and cinnamon. Pour over chicken. Cover and bake for 1 hour. Sprinkle wiht 1/2 cup toasted, slivered almonds.
