NO-FRY CHILES RELLENOS image

Number Of Ingredients 4

4 Anaheim peppers (about 2+ per person)
2 cups cheddar (or whatever), grated
Olive oil
Corn tortillas

Steps:

  • Brush the peppers with olive oil and roast them, on the grill or in the oven, until the skin is easily peeled off. Slice open the peeled peppers and remove the seeds. Cut the stems off. Stuff the peppers with cheese. Bake the peppers in the oven for 10-15 minutes. Wrap a pepper in a corn tortilla (it cuts the spiciness) and chow down!
