NICK'S TORTILLA SOUP image

Number Of Ingredients 23

1/2 Pkg of Frozen chopped onion, bell pepper, garlic or pkg without garlic and add 4 cloves garlic, minced
3 - 4 large shredded, cooked chicken breast
1 16 oz can of roasted tomato enchilada sauce (From Target usually)
2 (15 ounce) cans diced tomatoes
1 (10 ounce) cans mild enchilada sauce
1 (10 ounce) cans med. enchilada sauce
1 1/2 zucchini
3 cups water
48 oz natural chicken broth
1 tbls cumin
1 tlbs Williams Chile mix with or without chipotle
1 teaspoon black pepper
3 bay leaf
1 (8 ounce) package frozen corn
3 tablespoon chopped cilantro
12 corn tortillas chopped and placed in pot
Garnish:
Tortilla Strips
Avocado Slices
Sour Cream
Graded Cheddar
Splash Fresh Lime Juice
Sprinkle on chopped Cilantro

Steps:

  • Sauté veg mix in 1 tbls olive oil then Combine all ingredients in a stock pot and heat accordingly. Add chicken a few minutes before serving.
