Number Of Ingredients 9

4 cup cooked chicken breast, cut into 1/2-inch cubes
1 cup mayonnaise
1 cup diced celery
1 1/2 cup seedless purple grapes, cut in half
1 tablespoon chopped fresh parsley
1 teaspoon salt
Fresh ground pepper to taste
1/3 cup whipping cream
1/2 cup sliced almonds

Steps:

  • In a large bowl, toss chicken, mayonnaise, celery, grapes and parsley together adding salt and pepper to taste. -- Just before serving, whip cream to soft peaks and gently fold into the chicken mixture. -- Toast almonds in a dry skillet until golden brown, and stir into the mixture, reserving a few for garnish. -- Serve the salad in lettuce leaf cups or spooned into croissants to make sandwiches.
