Nanny's Chow Mein Chicken Salad image

Nanny, my kids' great grandmother on their dad's side, shared this recipe with me 18 years ago when she lived with us. This is a nice salad that's easy to make, light, healthy, & is a wonderful way to use up any left-over chicken you may have In the fridge. Number Of Ingredients 12

1 head lettuce, chopped
3-4 c cooked chicken, chopped
4 green onions, chopped
1 c chow mein noodles
1 c almonds, slivered
1/4 c poppy seeds (optional)
DRESSING
1 c canola oil
8 Tbsp red wine vinegar
2 tsp salt
1 tsp fresh cracked pepper
8 Tbsp sugar, (or equilavant of splenda)

Steps:

  • 1. In a large bowl, toss together, lettuce, green onions, almonds, poppy seed, & chicken breast.
  • 2. In a dressing mixer, add all dressin ingredients, & mix well. Just before serving, add chow mein noodles and dressing. Serve immediately.
