Nannie's Plain Loaf Cake image

I remember asking Nannie to jot down her favorite pound cake recipe she had just made. She obliged, and to this day, I always use Nannie's recipe because it is a plain and simple butter cake which is just the right size for a small family. She titled the recipe, Plain Loaf Cake, and I still have the scribbled out recipe...

1/2 c butter, softened
1 c granulated sugar
3 eggs
1 tsp vanilla extract
1 3/4 c all purpose flour, sifted
1/4 tsp salt
2 tsp baking powder
1/2 c whole milk
whipped cream, for garnish if desired

Steps:

  • 1. Cream butter together with sugar till light and fluffy.
  • 2. Add eggs one at a time and mix well on each addition.
  • 3. Add vanilla extract.
  • 4. In a separate bowl, sift flour together with salt and baking powder. Add these dry ingredients to the butter/egg mixture alternately with the milk.
  • 5. Butter and flour a 9x5x2 1/2 inch loaf pan and bake at 350 degrees F for about 1 hour or until a knife inserted comes out clean. To check your loaf pan size, measure inside side to side. Serve with whipped cream or plain as Nannie did.
