~ My Version Of Pioneer Woman's Meatloaf ~ image

My mother was hungry for meatloaf, so I wanted to make something different and found this recipe. I didn't use the bacon as I felt there was enough fat in the ground beef and believe me, it didn't need it. I added onion and peppers to mine, as I can't imagine a meatloaf without. 2 lb ground beef
6 slice bread
1 1/4 c milk
1/2 - 2/3 c chopped onion
1 medium green bell pepper, chopped
1 1/4 c shredded parmesan cheese
1 tsp kosher salt
1/2 tsp each ~ season salt & fresh cracked black pepper
4 eggs, beaten
1/4 c fresh chopped parsley

GLAZE
1 1/2 c ketchup
1/3 c brown sugar
1 tsp ground mustard
1/2 tsp dijon mustard

Steps:

  • 1. Preheat oven to 350 degree F. In a bowl add bread and milk. Swish around so all bread is soaking the milk. Leave set for 15 minutes or so. In a large bowl, add ground beef, seasonings, eggs, parsley, soaked bread, peppers, onions and Parmesan cheese. Mix well, I use my hands.
  • 2. I split the mixture in half and shaped 2 loaves. Placed in a 9 x 13 baking dish. Make glaze by placing all ingredient in a bowl, and whisk until thoroughly blended. Spoon half the glaze between the 2 loaves. Bake for 45 minutes. Add more glaze and continue baking another 20 - 25 minutes or until meat is completely cooked.
  • 3. Leave set up before cutting, as this is a very tender loaf. Quite delicious! Enjoy!
