My Version of Green Chile Stew image

This is my version of Green Chile Stew developed over the years and it's one we enjoy with the spicy rotel. Serve with cornbread and you have a meal.

2 Tbsp oil
1 1/2 lb boneless pork chops, cubed (approx. 6 pork chops)
1 medium onion, chopped
3 clove garlic, minced
1 tsp ground cumin
1 tsp black pepper
3 can(s) 4-oz cans mild green chilies, diced (add more if you prefer)
3 medium potatoes, peeled and cubed
1/2 pkg frozen corn, thawed
5 c chicken broth (or more to your liking)
2 can(s) whole tomatoes, crushed
1 can(s) rotel chilies & tomatoes

Steps:

  • 1. Brown cubed pork in oil in a dutch oven. Once browned, add onions and garlic - cook until onions are translucent.
  • 2. Add seasonings and green chilies - stir well to combine. Cook for 2-3 minutes to allow the seasoning to develop.
  • 3. Add tomatoes and crush with your hands. Add rotel tomatoes and chilies.
  • 4. Add potatoes and broth and bring to a boil - then simmer until potatoes are tender, but still firm - 30 - 45 minutes.
  • 5. Once potatoes are cooked, add corn to stew. Adjust seasonings and serve.
