This is my version of Green Chile Stew developed over the years and it's one we enjoy with the spicy rotel. Serve with cornbread and you have a meal.

Steps:
- 1. Brown cubed pork in oil in a dutch oven. Once browned, add onions and garlic - cook until onions are translucent.
- 2. Add seasonings and green chilies - stir well to combine. Cook for 2-3 minutes to allow the seasoning to develop.
- 3. Add tomatoes and crush with your hands. Add rotel tomatoes and chilies.
- 4. Add potatoes and broth and bring to a boil - then simmer until potatoes are tender, but still firm - 30 - 45 minutes.
- 5. Once potatoes are cooked, add corn to stew. Adjust seasonings and serve.
