My spanish rice image

I normally dislike spanish rice so I came up with this recipe to suit my personal taste. My family likes it and it's not to hot.

Number Of Ingredients 8

2 cup(s) rice, instant
1 can(s) mexican corn
1/2 - onion
1 - bell pepper
1 can(s) beef consomme
1 can(s) rotel
1 tablespoon(s) butter, room temperature
1 tablespoon(s) olive oil, extra virgin

Steps:

  • Saute onion and bell pepper in butter and olive oil
  • Add the rice, rotel and mexican corn to the skillet. Saute for about a minute then add the beef consomme.
  • Let simmer for a few minutes. Transfer mixture to a medium sized baking dish. Bake at 350 degrees for about 20 minutes or until rice is tender.
