~ My Meatloaf Surprise ~ Yum! image

Okay, I had some leftover corn bread, sausage and ground beef needing used. This is the recipe I threw together. The kids loved the addition of the gooey Mozzarella cheese in the middle. I made some in my silicone cupcake liners and the rest in my mini loaf pan. They were scrumptious! Enjoy!

1 1/2 lb ground round
1/2 lb sausage ( i used bob evans plain bulk sausage )
1 Tbsp butter or oil for sauteeing veggies
3/4 - 1 c sweet onion, chopped
1/4 c each - diced red bell pepper & green bell pepper
1 clove garlic, minced
1 medium carrot, small diced
1 oz about 5 mushroom slices - chopped ( optional )
3 eggs
about 2 cups corn bread crumbled. ( i used my jiffy mix recipe ~ my simple savory cornbread recipe is posted ) - could halve the recipe for this or just use the box mix
1 c ketchup or tomato sauce
1 Tbsp fresh parsley, minced
2 Tbsp worcestershire sauce
1 c shredded, sharp cheddar cheese
1 1/2 tsp kosher salt
1/2 - 3/4 tsp pepper
1/2 lb block, mozzarella cheese - cubed - about 1 x 1 inch cubes
SAUCE
1 c tomato sauce
1/4 c each - brown sugar, mustard, rice wine vinegar or any vinegar
1/2 tsp garlic powder

Steps:

  • 1. Preheat oven to 350 degree F. This can be made into a loaf, but I used my mini loaves pan and got 8, plus I used silicone muffin liners. I got 8 out of those. If making a loaf, the bake time should be increased. Spray whatever pans you will be using, except if using silicone, they won't stick to that. Set aside.
  • 2. In a med skillet, saute carrots, onion, mushrooms, peppers, garlic until tender crisp.
  • 3. In a large mixing bowl, beat eggs lightly - to this add the veggies, parsley, ketchup, cheddar cheese, Worcestershire and corn bread - combine well.
  • 4. Crumble the ground beef and sausage over the mixture. Add salt & pepper and mix until well combined.
  • 5. I then took about 4 ounces of the meat mixture and shaped into a ball, then pressed a cube of cheese into the center and formed the meat around it to enclose.
  • 6. Place each into prepared pan or cupcake liners. If making a loaf, just make an indentation down the center of your loaf and place several pieces of cheese and shape meat back over the cheese.
  • 7. I placed the cupcake liners on a baking sheet and placed the mini loaf pan beside it in the oven. Baked for 40 minutes, or until meat is no longer pink in center. While baking, make sauce if using. In a small bowl, whisk all ingredients together, until well blended. Can heat in a saucepan of you want extra warm sauce to serve with the meatloaf.
  • 8. When the meatloaves are about 5 minutes from being done, spoon some sauce over each or over entire loaf. Bake another 5 minutes. I then broiled for a couple minutes.
  • 9. Serve immediately with warmed sauce if desired.
