Steps:
- Heat Olive oil in large saucepan over medium heat. Add onion, thyme, salt and cook. About 10 minutes.
- Add mushrooms and cook until almost all the moisture has evaporated. Add wine and continue to cook in almost dry. Add chicken stock and cook until reduced by 1/2
- Combine butter and flour together in small bowl until paste forms. Add the paste to the simmering gravy.
- Add Parsley. Adjust seasoning to taste
