Mushroom Gravy image

Number Of Ingredients 10

1/4 cups Olive Oil
1 Onion - Sliced
1-1/2 tablespoon Salt
1 tablespoon Fresh Thyme
1 pound Mushrooms - sliced
2/3 cup Dry White Wine
4 cups Chicken Stock
1/2 stick Butter
1/4 cup Flour
1/3 cup Fresh Chopped Parsley

Steps:

  • Heat Olive oil in large saucepan over medium heat. Add onion, thyme, salt and cook. About 10 minutes.
  • Add mushrooms and cook until almost all the moisture has evaporated. Add wine and continue to cook in almost dry. Add chicken stock and cook until reduced by 1/2
  • Combine butter and flour together in small bowl until paste forms. Add the paste to the simmering gravy.
  • Add Parsley. Adjust seasoning to taste
