Mushroom and Parsley Salad image

Number Of Ingredients 7

1 pound large button mushrooms, trimmed, cleaned, and thinly sliced
1/3 cup fresh flat-leaf parsley, chopped
1/4 cup extra-virgin olive oil
1/4 cup fresh lemon juice
1 kosher salt
1 ground black pepper
2 ounces parmesan cheese

Steps:

  • In a medium bowl, mix mushrooms and parsley.
  • Whisk together oil and lemon juice. Add salt and pepper, to taste.
  • Add dressing to mushrooms and toss until coated. Shave parmesan on top and serve.
