3 cups shredded zucchini w/o seeds
1 cup oil
2 cups sugar
2 teaspoons vanilla
3 eggs
3 cups flour
2 teaspoons cinnamon
1/2 teaspoon nutmeg
1/4 teaspoon ground cloves
1 teaspoon salt
1 teaspoon baking soda
1 teaspoon baking powder

Steps:

  • Grease and flour 2 loaf pans. Mix zucchini, oil, sugar, vanilla, and eggs. Then add flour, cinnamon, nutmeg, clove, salt, baking soda, and baking powder. Bake for 1 hour @ 325 degrees
