Number Of Ingredients 7

2 eggs
2/3 c cooking oil
2 tsp vanilla extract
3/4 c sugar
2 c all purpose flour, sifted
1/2 tsp salt
2 tsp baking powder

Steps:

  • 1. Preheat oven to 350 degrees F. In a mixing bowl, beat eggs with a fork. Stir in oil and vanilla. Add sugar, stirring until mixture thickens. Stir in flour, salt, and baking powder until well combined.
  • 2. Drop by rounded teaspoons about 2 inches apart on an ungreased cookie sheet. Flatten with greased fork or bottom of glass which has been dipped in sugar.
  • 3. Bake about 8 to 10 minutes until light golden brown. Remove immediately from baking sheet to cooling racks.
