Steps:
- Preaheat oven to 375 In large bowl, combine turkey, spinach, onion, breadcrumbs, parsley, oregano, egg whites, salt and pepper. Mix well. Press 1/2 of mixture into 8-inch loaf pan. Top bottom half with mozzarella. Press remaining turkey mixture over mozz. Whisk together ketchup and mustard and spread over prepared meatloaf. Bake for one hour, until top is golden and sides have started to pull away from pan. Let stand 10 minutes before serving.
