MOTHER'S HOMINY BAKE image

I have always been crazy about hominy and I have always been surprised by how many of my fellow Northerners have never heard of it. I grew up with it, even though none of my family is from the South. 2 Tbsp olive oil
1 onion, minced
1 can(s) (4 oz.) chopped green chiles, drained
2 clove garlic, minced
1 tsp ground cumin
2 can(s) (15 oz.ea.) white hominy, drained and rinsed
1/2 tsp salt
1/4 tsp pepper
1 c sour cream
1 c shredded cheddar cheese

Steps:

  • 1. Heat the oil in a large skillet over medium heat. Add the onion and cook, stirring occasionally, until softened, about 5 to 7 minutes.
  • 2. Stir in the chiles, garlic, and cumin and cook until fragrant, about 30 seconds.
  • 3. Add the hominy, salt and pepper and cook until the hominy is heated through, 3 to 5 minutes. Remove from heat and stir in sour cream and 3/4 cup of the cheese.
  • 4. Transfer the mixture to a greased 8-inch square baking dish. Sprinkle the remaining 1/4 cup cheese over the top.
  • 5. Place the baking dish on a foil-lined rimmed sheet and bake in a preheated 350º oven until the sauce is bubbling and the cheese is melted, about 20 minutes. Cool for 10 minutes before serving.
