Steps:
- 1. Preheat oven to 450ºF.
- 2. Combine chopped mango, red pepper, onion, ginger (if using), mint and orange juice in a bowl. Cover and store in refrigerator until ready to use.
- 3. Spread harissa over both sides of salmon fillets; sprinkle with salt. Place salmon on a baking sheet coated with cooking spray. Bake at 450º for 20 minutes or until the fish flakes easily when tested with a fork.
- 4. Serve with the mango salsa.
