Montezuma Pie image

Easy make ahead Mexican dish with only 5 ingredients. Mild dish can be spiced up as desired by substituting hot salsa and/or pepper jack cheese. Prep time does not include refrigeration time.

6 cups boneless cooked chicken breasts, cut into 1-inch pieces
2 cups chunky salsa
2 cups sour cream
12 corn tortillas, cut into pieces
24 ounces monterey jack cheese, shredded

Steps:

  • Arrange half the chicken in greased 9x13 baking dish.
  • Dot with half the salsa, then half the sour cream.
  • Top with half the tortilla pieces and half the cheese. Repeat layers ending with cheese.
  • Cover and refrigerate overnight.
  • Bake covered at 375 for 40-50 minutes.
  • Uncover and bake additional 10 minutes or until bubbly.
