Monster Cookie Pizza image

This recipe came about because of an accident with a cookie recipe. My son Aaron was making chocolate chip cookies for the first time with me supervising. He did great with the mixing but when it came time to bake he used the ice-cream scoop to put them on the cookie sheet. We went to check on them because they were going to spread out and we were surprised to find that they were spreading over the side of the pan so while my son got them out of the oven before they started to bake completely, I got a cookie sheet with sides and we sprayed it and scraped the melting cookies on to it. We finished baking them and to our surprise they looked like a pizza because all the chocolate was on the top and the cookie was on the bottom.

1/2 cup shortening
1/2 cup butter
2 1/2 cups all-purpose flour
1 cup packed brown sugar
2 eggs
1 teaspoon vanilla
1/2 teaspoon baking soda
1 (12 ounce) package semisweet chocolate chips

Steps:

  • Preheat the oven to 375 degrees F.
  • In a mixing bowl beat the shortening and butter with an electric mixer on medium to high speed for 30 seconds. Add 1 1/4 cups of the flour and the brown sugar and beat until thoroughly combined. Add the eggs, 1 at a time, and mix until incorporated. Add the vanilla and baking soda. Beat in the remaining 1 1/4 cups flour and mix until well combined. Stir in chocolate chips.
  • Using a large ice-cream scoop, place full scoops of the batter on a cookie sheet with no sides. Bake for 5 minutes or until they start to melt. Remove from oven and place on a cookie sheet with sides or a medium size jelly roll pan. Finish baking about 6 to 10 minutes or until cookie base is dark brown. Remove from oven and let cool. They can be sliced into squares or broken into pieces.
