Mom's Zuchinni Bread image

This bread was a family favorite that Mom used to make. It is very good served warm.

Number Of Ingredients 12

3 c all purpose flour
2 tsp baking soda
1/2 tsp baking powder
1 tsp salt
1 1/2 tsp cinnamon, ground
2 c sugar
2 tsp vanilla extract
3 eggs
2 c coarsley shredded zuchinni
3/4 c finely chopped pecans or walnuts
1 can(s) (8 0z) crushed pineapple, drained
1 c canola oil

Steps:

  • 1. Combine flour, baking soda, salt, baking powder, cinnamon and nuts. Set aside.
  • 2. Beat eggs slightly in large bowl then add: sugar, oil and vanilla. Beat until creamy. Stir in zucchini and pineapple.
  • 3. Add dry ingredients stirring only until moistened.
  • 4. Spoon batter into two well greased and floured loaf pans.
  • 5. Bake at 350 degrees for 1 hour or until done. Cool 10 minutes in pan.
